K is For Kabinett

      Deciphering a label on a bottle of German wine can be a daunting task.

   First, there's the obvious language barrier. Beyond that, some of the guidelines that have been established are "loosely interpreted" by some vintners.

   However, there are certain words you can look for that almost always assure quality in the bottle. And with that in mind, it's time to dip back into our alphabet soup of wine...

"K" is for Kabinett

   Germany's wine laws are based on both tradition and geography, and Qualitaswein mit Pradikat (QmP) is the top level of quality wine.

   The term roughly translates to "with distinction."

The Six Levels of QmP

   There are six levels of QmP wines, based on the must weight of the grapes. Kabinett is the most delicate of the six levels.

   This makes Kabinett the best level of QmP wines for pairing with food, because the other levels are increasingly sweet.

   And because of the strict guidelines and defining characteristics, the QmP wines of Germany are considered the most "noble" white wines in the world.

   So even if you can't understand any of the language on a bottle of German wine, if you see the word "Kabinett" on the label, you can be reasonably sure that you're holding a bottle that would be wonderful with your evening meal. A meal like... Broiled Salmon With Bacon Raspberry Beurre Blanc

Broiled Salmon With Bacon Raspberry Beurre Blanc

   Pop the cork on a Kabinett wine and pair it with this recipe that packs plenty of flavor, yet will not overwhelm the nuances of the vino. The recipe makes two servings.

Ingredients

  • 2 8-ounce fresh salmon fillets
  • 6 strips maple-flavored bacon - 2 strips reserved, cut in 1/2-inch pieces

For The Beurre Blanc

  • 1 tablespoon butter
  • 1 tablespoon hazelnut syrup
  • 1 tablespoon Muscat or similar wine
  • 1/2 cup raspberry jam
  • 1/4 cup chopped hazelnuts

Preparation

1. Place salmon fillets on an oven broiler pan and broil about 4 inches from heat for 3 minutes; turn fillets and top each with 2 strips of bacon. Broil an additional 3 to 4 minutes or until bacon is soft-cooked. Remove, set aside, keep warm.

2. In a nonstick skillet, over medium heat, saute reserved bacon pieces until soft, drain and set aside.

To Make Beurre Blanc

   In the same skillet, over medium heat, melt butter, add hazelnut syrup, wine and raspberry jam. Cook mixture several minutes until reduced and soft glaze is formed; stir frequently to avoid sticking. Stir in reserved bacon pieces.

   To serve, place half of the beurre blanc on a plate. Place the salmon fillet on the sauce and garnish with chopped hazelnuts. Repeat for remaining fillet.
